Review:
In this work, focusing on the production of sheep and goat cheeses, we will try to show its potential as a factor of economic growth in depressed areas of Spain. To do this, after some preliminary considerations regarding marginal agrarian systems and the phenomenon of socioeconomic depression in Spain, we will begin by analyzing the possible role of commercial production of sheep and goat cheeses in depressed areas, to comment later on some measures that in our opinion they should be adopted for their promotion and end by offering, as a statistical heading, a quantitative overview of the current supply and consumption situation of said products in Spain.
