A descriptive table is proposed to classify sheep carcasses based on four carcass characters, two of which, the weight and the degree of maturity are objectively determined and define the different classes. The other two, the conformation state and the greasing state are subjectively estimated with the help of photographic models and define the different types of channels that can be found within each class.
