This work present a general review of the studies undertaken on a continuous process of wine production by non-seasonal approach known as the “Vinerías” system. The basic principles of the system were established by MESTRE at the Viticulture and Enology Station a “Villafranca del Panadés”, and these have been complement by contributions from the Centro de Ampelografía y Viticultura in Madrid where a pilot plant has been developed. The “Vinerias” systems has as its starting point extracted musts that a can be preserved indefinitely. Once they are desulphitized they caon then be fermented by an automatic continuous process that permits the integral use of byproducts, including carbon dioxide, alcohol and aromas.
