On days 18, 19 and 20 January 2006 Technical Conferences were organized in Brihuega (Alcarria region of Spain), with the aim of publicizing everything concerning the world of aromatic and medicinal plants, the methods of obtaining their essential oils and their use as raw material in the production process. Their purpose was primarily the training of farmers, but they were also directed to people in the university, administration and transformer sectors. This activity, which began almost a century ago, now emerges with particular dynamism, through the use of modern technologies to select genotypes of plants and the use of machinery specifically designed for these purposes. In short, this is an opportunity for the farmers to delve into this world and have the opportunity to decide if it is worth spending part of a development activity which aims to involve sector authorities, trying to get state aid for farmers and community to enable them to meet the necessary productive investments. The environmental benefits, tourism and hotels would receive the Alcarria with these developments are a natural consequence of their work. This book presents the various papers presented at these conferences.
