The book begins with the taxonomy of the genus Allium, followed by the study of its distribution and centers of diversity. Then, short comments about the edible species of the genus Allium are presented, explaining in detail the botanic characteristics, growth and cultural practices of the onion. A concise description of other edible botanic varieties of onion is also included. The introduction finishes with the evolutionary relationships, domestication, history and diffusion of the crop. Afterwards, the structure of the catalogue is detailed. The last section of the book presents the accessions grouped according to their similarities with commercial types: Grano, Viguetana, Colorada de Conservar, Cónico and Babosa. Within each group subdivisions have been made according to their skin and fresh colour. Passport and characterization data are included in the catalogue
